Located on the 5th floor of Palladium Mall, the new 65-seater restaurant introduces Ahmedabad to the recipes, cooking techniques and signature dishes that have defined Copper Chimney since 1972.

Founded by JK Kapur in Bombay in 1972, Copper Chimney draws inspiration from the secret recipes and cooking techniques of Undivided North India. Having grown up near the North West Frontier Province before migrating to newly independent India during partition, JK Kapur wanted to share the culinary experiences reminiscent of his early years. In November 1972, 25 years after arriving in the city, this vision took shape with the opening of the first Copper Chimney in the heart of Bombay. Over the past five decades, the restaurant has grown to more than 20 outlets, taking millions of guests on a culinary journey through Indian cuisine, culture and flavours.
At the heart of Copper Chimney’s culinary philosophy are recipes and techniques passed down over generations by its Ustaads, trained master chefs whose culinary traditions trace back to those trained under JK Kapur. From custom clay ovens designed for even heating to distinctive spice blends, the restaurant continues to preserve the techniques and attention to detail that have shaped its food over the years.
The Ahmedabad menu brings together a selection of the restaurant’s signature dishes, including Palak Goolar Kofta, Dal Maharaja, Signature Kadak Roomali, Paneer Masala and Muzaffar. The restaurant offers a curated vegetarian and non-vegetarian menu, with separate cooking sections for each. Dedicated refrigerators, tandoors and cutlery are used for vegetarian and non-vegetarian preparations, with the same attention to segregation maintained throughout the kitchen.
Adding to the dining experience, the restaurant features a show kitchen that offers guests a glimpse into the preparation of its signature dishes, bringing the craft, techniques and expertise of Copper Chimney’s Ustaads into view.
Complementing the food menu, Copper Chimney Ahmedabad offers a dedicated non-alcoholic beverage menu, including zero-proof cocktails and soft cocktails, giving guests a considered selection of drinks to pair with their meal.
